Even in Japan ‘Gindara Saikyozuke’ is considered to be an exclusive delicacy. The exquisite taste and magnificent balance between the soft fish texture and the sweet miso paste is what makes this dish so special. In Japanese, the literal translation of Gindara is ‘silver cod’ instead of ‘black cod’ and when you’ll try it you’ll know why. The black cod is best served with a cold glass of Japanese rice wine.
