Hotate scallops have beautiful soft and sweet meat and an incredibly delicate texture. The best hotate comes from cold waters, which is why our hotate is caught in Hokkaido. In Japan it is very common to eat hotate raw in the form of sushi or sashimi. However, these scallops are also sublime when grilled or baked.
1. Defrost the Hotate in the refrigerator or in cold water for 30 minutes.
2. Remove the package from the fish and pat dry with paper towel.
3. Cut the fish into slices and eat raw.
4. Enjoy your meal!
