In Japan, the focus on sustainability increases. Full circle farming is booming in Japan. The red sea bream is fully grown in the open sea and is therefore completely sustainable. The Japanese gave it their own refined twist and developed Madai. The Tai (dorade), which is very popular in Japan for sashimi, is now available as a cultivated variant. If possible, Madai is even more tasteful than its scarce wild counterpart. Madai is delicious white fish that is indispensable in every sashimi dish.
