Hoshi Karei is the second product Hokkai Suisan started producing after Aji no Hiraki. The fish is first treated with salt and then dried. Japanese people like this preparation method, not for conservation purposes but simply to enrich the taste of the fish. It’s simple, the drying process will drain the water and make the flavors more concentrated.
1. Preheat the oven to 230℃.
2. Place the freshly frozen fish to a baking paper-lined baking sheet and put in the oven for 7 minutes.
