Hokkai at Home: Salted salmon with vegetable sauce

Hokkai at Home with Kelly (32) from Haarlem: Neither my boyfriend nor I really like cooking, but we do like healthy food we often choose a meal with fish, because it’s a source of protein and low in calories. The fishproducts of Hokkai suisan can be prepared in the oven in just a few minutes, making them ideal for a quick but healthy meal. The different flavours of Hokkai also keep our meals variedToday we are preparing on of our favorite dishes, namely salted salmon from the oven with pasta an a home-made spinach-mushroom sauce.”

Ingredients

  • Shio Zake (salted salmon)
  • 200 gr fresh spinach
  • 250 ml heavy cream
  • 125 gr mushrooms
  • 125 gr noodles/pasta/rice
  • Seasoning to taste: pepper, garlic powder, onion powder

Preparation

  1. Preheat the oven to 230 degrees.
  2. Thaw the salmon in the fridge or in cold water for half an hour.
  3. Meanwhile, cook the noodles/pasta/rice according the instructions on the packet.
  4. When the fish is thawed, place it skin side up on a baking sheet with baking paper in the oven for 7 minutes. You could add a little pepper, but in my opinion the Hokkai fish is flavourful enough and doesn’t need anything extra.
  5. Fry the mushrooms on high heat in a pan with a little olive oil.
  6. After about 5 minutes, add the spinach and let it shrink.
  7. Then add the cream and the herbs (to taste).
  8. Place the noodles/pasta/rice on a plate, pour over the vegetable sauce and place the salmon on top.
