Chef’s Recipe: Aji no Hiraki Takikomi Gohan

Ingredients

  • Aji no Hiraki (one fillet, you can add more if you like)
  • 300gr Japanese rice
  • 400 ml water
  • 2gr dashi powder
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 pinch of salt
  • 15 gr fresh ginger (sliced in stripes)
  • Chives
  • Ginger slices
  • Shiso leaf
  • Sesame seeds

Preparation

  1. After preheating the oven on 230 ℃, grill the Aji no Hiraki for 7 minutes. Wash the rice and put in a cooking pan. Add the water, dashi, mirin, sake, salt and fresh ginger and cook on high heat until it starts boiling.
  2. Once the rice is boiling, add the grilled Aji no Hiraki and turn to low heat for 10 minutes. If the water is almost all gone, turn the heat up high one more time for about 20 seconds, this will make the taste more exquisite.
  3. Take the Aji no Hiraki out of the pan and fillet in small pieces (be careful to take out the bones) and mix the Aji no Hiraki through the rice.
