Hokkai at Home: Marinated mackerel with fried vegetables

With a wife that loves to cook, I developed a quite high culinary standard. A simple dish from Hokkai Suisan certainly meets my demands. The quality and taste of the fish combined with the ease with which you can prepare it, really amazed me. And my wife too! I surprised her with a tasty Saba Mirinboshi with fried vegetables and white rice.”

Ingredients

  • Saba Mirinboshi
  • 150 grams uncooked rice
  • 2 red onions
  • 100 grams paksoi
  • 100 grams Chinese cabbage
  • 50 grams sugar snaps
  • 50 grams beansprouts
  • Splash of soy sauce
  • Optional: fried onions, chili sauce and ketjap manis

Preparation

  1. Defrost the mackerel fillets for 30 minutes in the package in cold water.
  2. Preheat the oven at 230℃.
  3. Cook the rice according the instructions on the package and leave for 15 minutes after draining all the water.
  4. Cut the red onion, paksoi, sugarsnaps and Chinese cabbage in small pieces.
  5. Take the defrosted mackerel out of the package and put the fillets on a greased oven tray. Put in the oven for ca. 6 minutes.
  6. Put a large frypan on high heat and let the surface get hot. Stir-fry all the vegetables and add a splash of soy sauce right before serving.
  7. Plate the plates by equally diving the rice, vegetables and carefully placing the mackerel on the side.
